Jeanne Schumacher
Earned her doctorate in science and education and has taught chemistry, biology and environmental science for over 30 years. She is a firm believer in “walking the walk" and is committed to inspiring people to change their health destiny through a whole-foods, plant-based lifestyle as well as reducing the toxins in their life. She is passionate about making a difference in the lives of others by teaching them practical ways to improve their health.  She believes that food is our best medicine as well as reducing the level of toxins that we are being exposed to.  This helps get our bodies back to a state of health when faced with “dis”-ease. She has been sharing her knowledge through motivational and educational lectures.

Schumacher has followed a plant-based diet since 2009 and has become a motivational speaker and educator on whole-foods, plant-based living. She is also an advocate for living toxic free.  Her transformation to a healthier lifestyle began with a trip to the emergency room with a 105 degree fever, deadly high blood pressure and an unknown infection.  Luckily, the physician who attended her was not only trained in medicine but also in nutrition.  This doctor started Schumacher on a journey that would not only change her life, but her health destiny as well. Schumacher has successfully earned her Plant-Based Nutrition Certificate through eCornell - Center for Nutritional Studies, completed the coursework from Dr. John McDougall on the Starch Solution and has completed many courses through The Wellness Forum from Dr. Pam Popper.

Nancy Norby Mathews
After living the Standard American Diet for 49 years I found myself 120 pounds overweight. I had developed Fatty Liver Syndrome, high cholesterol and I had thyroid disease.   I had skin disorders like Eczema, Rosacea as well as acne.  My entire life I suffered from both indoor and outdoor allergies and asthma.  I developed Polycystic Ovarian Syndrome in my mid 30’s which led to a myriad of female issues.   In February 2012, I watched the ground-breaking documentary Forks Over Knives.  I found this to be pivotal moment in my life. On March 1st, 2012, I adopted a plant based Lifestyle.

After adopting a plant based lifestyle I’ve shed 100 pounds, reversed my fatty liver syndrome and lowered my total cholesterol to below 150.  I no longer have severe allergies or asthma, I no longer take medication for allergies, Rosacea or for thyroid disease.  Shedding the weight, regaining my health has changed my life. I’m now 54 years old. I’ve ran 2 half marathons, and countless 5 and 10K’s. My husband and enjoy hiking and overnight back packing trips.  My parents both suffered from heart disease, RA, cancer and Parkinson’s Disease. In the end, they both passed from cancer.  All of which were preventable and reversible diseases.  By simply changing what food I eat has changed the course of my life and my health destiny.  It can change yours too.
